The reasons of the High Quality Ghiradi Onesto

Our quality is this result of an intelligent and careful research aimed to obtain a higher - level product: "a masterpiece Parma Ham". Only by tasting it, you will appreciate its characteristic:

  • Colour: well - blended light pink;
  • Consistency: of its dense meat, coming from highly selected farms;
  • Tenderness: velvety, unique and inimitable, witness of the slow curing process;
  • Scent: intense and marked, typical of life - size aged meat in the full respect of the millenary tradition of this product;
  • Sweetness: delicate and matchless, witness of an ancient salting process, by means of very little sea salt supply.

To obtain such important result, we have followed scrupulously the precious rules of the tradition by using:

  • The best Italian pork meat: directly selected by our staff to the slaughterhouses of our suppliers;
  • The skilled local workers: who hand on from father to son the millenary tradition of hams - making;
  • The air and the microclimate: strictly of Langhirano, fundamental for the good ageing of the hams;
  • Machinery: very few and technologically bond to the past, to hold fast the ancient processing methods;
  • The salting process: only hand - made by the "Salting Mater";
  • The curing: slow and progressive "with no hurry".

Each one of our hams is branded on the back with the exact date of the salting. That's the reason why we are able to guarantee the curing on a day-to-day basis.
